Yalla, let’s eat Mexican Street Corn Salad! This recipe is a twist of my friend Ingy’s recipe (thanks girl). This recipe is GREAT for a bbq or a potluck. You can add it to your burger or as a side all on it’s own because it’s DELISH honey. Don’t have a grill? Stick your corn in the oven on broil till you get the same effect:) so so so good guys try it today with the chili and lime seasoning from Trader Joes or the Tajin spice!


 


 

Yalla, Let's Eat Mexican Style Street Corn!

Serves: 13-15 people


Ingredients:

  • 8 ears of fresh corn (grill it it's worth it)

  • 1/2 bunch of chopped cilantro

  • 1/2 cup of mayo

  • 1/2 cup of mexican crema

  • 1 cup of crumbled cojita cheese

  • 1/2 of a medium red onion chopped

  • 1 charred jalapeño chopped

  • The juice of one lime

  • 1 teaspoon of chile lime seasoning

  • 1/2 teaspoon cumin

  • 1 teaspoon salt

  • 1/2 teaspoon cayenne pepper (or less)

  • 1 teaspoon paprika (can add more)

  • 1/2 teaspoon of chili powder

Directions:

  1. Husk your corn and grill in with your jalapeño. Set it aside to cool. Then cut the corn along side the core (watch the highlight lol)

  2. In a big bowl add all your ingredients.

  3. Taste, season accordingly and yalla let's eat!
