Yalla, Let's Eat Fiteer!



Have you ever just craved something from Egypt?! Well, my number one craving is always fiteer. I am obsessed with it. It is extremely delicious! I always have it when I'm visiting family in Egypt, but sometimes I just want to make it for bunch or a light breakfast. My mom and I made a post about it a couple weeks ago on my instagram page and the audience.went.nuts. I couldn't believe how easy it was. I tell you Hewiada (my mom) has mad skills. So in honor of Egypt (Tahya Masr) and my mom I present to you the fiteer recipe. Yalla, let's eat!

 

Yalla, Let's Eat Fiteer! (Makes 4)

Ingredients

  • 2 cups of all purpose unbleached flour

  • 1/2 teaspoon of salt

  • 1/2 -3/4 cup of warm water

  • 1 tablespoon of oil

  • 1/3 cup of melted butter

  • 1/3 cup of canola oil

  • 1/3 cup sour cream (as needed)

Directions

  1. Mix your flour and salt in a Kitchenaid mixer on 1using the dough attachment. With the mixer moving, add the warm water little by little. Please note, you might not need all the water you might need more. Just keep adding slowly until you see that the dough is coming together. add you tablespoon of oil. Bring the speed up to 2. Speed it up for about 4 min until you feel the dough is completely kneaded. My mama said the dough should feel soft and not sticky. That's what my mama said so I would listen, she's scary.   2. Let your dough rest anywhere from 30 minutes to overnight. The more you let the dough rest the better the fiteer.

  3. Mix your butter and oil in a bowl. Take your rested dough and roll it up into 12 little balls.

  4. Dip your ball of dough in the bowl of fatty goodness. On a clean surface use your hand or a rolling pin to spread out the dough. Dip you fingers in the butter mixture to help you spread the dough. Roll from the middle to out. Don't rip the dough but try to get it as thin as possible. The thinner the dough the fluffier the fiteer!

  5. Add a dollop of sour cream to the thin dough. Spread. Fold the dough long ways and then fold the flaps in. It's gonna look like a square (just watch the part 2 video on IGTV.) Put in to the side.

  6. Repeat step 4. Add your square dough in the middle of the new dough. Repeat step 5.

  7. you can keep doing step until you have 4 layers.

  8. Let the dough rest for at least 30 min to an hour.

  9. Take your dough put it in the middle of your 12'' baking pan and spread it to cover the whole surface of your pan.

  10. Your oven should be on 375 degrees convention bake. The fiteer will bake until it puffs up and is golden brown on top!
