Yalla, Let’s Eat Chicken Chipotle Pasta!

Have you ever just craved The Cheesecake Factory Honey Chipotle Pasta dish, but cringed at the idea of driving there, and waiting 2 hours to enjoy a 16 dollar pasta dish? I FEEL YOU!! I wanted to recreate the dish so that you would never have to do that again. This easy pasta meal will not only satisfy your craving, but make you feel like you can make anything in YOUR kitchen! Enough chit chat, let’s get to the good stuff baby!

 


Ingredients:

  • 1 box of pasta of your liking (save 1/2 cup of starch water)

Sauce

  • 1 onion chopped

  • 4 cloves garlic chopped

  • 1/2 red,orange,yellow pepper chopped

  • 1 can Rotel diced tomatoes with chipotle

  • 1 1/2 cups of heavy cream

  • 2 tablespoons flour

  • 1/2 tablespoon honey

  • 1/2 cup parm cheese

  • 1/2 cup peas

  • 1/2 cup chopped asparagus

  • chopped cilantro and chives for garnish

Chicken

  • 1 lb chicken breast chopped

  • 1 tablespoon Cajun seasoning

  • 1/2 tablespoon cumin

  • 1/2 teaspoon turmeric

  • 1 tablespoon olive oil

  • 1/2 tablespoon garlic powder

  • 1 tablespoon paprika

  • salt and pepper

Directions:

  1. Cook the chicken in a deep pan where you'll have room to make your sauce and add your pasta.

  2. Take the chicken out of the pan set aside. In the same pan add your onions, peppers, garlic, peas, and asparagus with a little salt and let the bad boys sweat out.

  3. Add your can of tomatoes and let it cook out a little.

  4. Add your flour and whisk until it's clear and cooked out (1-2 min)

  5. Little by little add your cream into the pan and mix well. Here you can add your starch water as well.

  6. Add some tumeric, salt, pepper, paprika and honey to the sauce. Taste.

  7. Add your chicken and let it cook for 4-5 min simmering in the pan. Taste again.

  8. Mix in your pasta and your cheese.

  9. Top it off with the cilantro and chives.
